Sausage, Kale, & Potato Soup

Ingredients

  • 1 lb Italian sausage

  • 2 cubed potatoes

  • 32 oz broth (any kind)

  • 2 cups heavy whipping cream

  • 1 medium onion

  • 1 tsp olive oil

  • 2 cloves garlic

  • 1 tsp Italian seasoning

  • 1/2 tsp red pepper flakes

  • 1 tsp salt

  • 2 cups of kale torn into bit sized pieces


  1. Heat olive oil on medium heat

  2. Sauté diced onion and garlic until soft (don’t burn the garlic!)

  3. Add Italian sausage — stir until brown

  4. Add cubed potatoes and cook for a couple minutes

  5. Add broth and seasonings

  6. Bring to a boil, and then turn it down to simmer for about 10 minutes

  7. Add the kale and let that cook down for about 20 minutes

  8. Add the whipping cream and set on low (the longer it sits and rests, the better it tastes)
