Chickpea Tacos

Ingredients:

  • 1 can chickpeas

  • 1 tbs olive oil

  • 1 tbs soy sauce

  • 1 tbs chili powder

  • 1 tsp garlic (chopped cloves or powder)

  • 1 avocado

  • tortilla shell

  • 1 lime

  • optional : hummus, cheese, and lettuce to top


  1. Heat olive oil on medium heat

  2. Add chickpeas and sauté for a couple of minutes

  3. Add soy sauce, chili powder, and garlic

  4. Cook on medium low for about 10 minutes (you want to cook the garlic and chickpeas down but not burn the garlic)

  5. Put the chickpeas in the tortilla shell, topped with avocado cubes and drizzled with lime juice

  6. Add any other toppings per your preference!

  • Tip - sometimes putting some hummus on the tortilla first helps so that the chickpeas don’t roll right out!
